Fruit Salsa & Cinnamon Chips

vce fruit salsa and cinn chipWarm weather means outdoor cooking and entertaining!  Fruit Salsa with Cinnamon Chips are a light and refreshing appetizer, snack or treat perfect for sunny afternoons on the patio.

Tonya Pickett, NOI Nutrient Outreach Instructor with the Virginia Cooperative Extension Family Nutrition Program, is teaching participants at the Trust House, a transitional living shelter in Roanoke, how to cook nutritious meals that the whole family will love.

vce fruit salsa cinn chip prepThe “Eat Smart, Move More” program is a series of six classes that showcase recipes that cost no more than $1.00 per person, per meal. All the participants get hands-on cooking experience, nutrition awareness training and learn the health benefits of physical activity. Eat Smart, Move More is currently running at six locations throughout the Roanoke valley.

Most of the ingredients for the recipes are pulled from Feeding America Southwest Virginia stock and are used to show participants that items available through partner food pantries can be used to make delicious, easy, and nutritious meals for an entire family.

Banana Pudding in a Bag

 

banana puddingFor a fun, tasty and healthy treat have your kids get their hands on Banana Pudding in a Bag!

As part of the Virginia Cooperative Extension’s “Expanded Food and Nutrition Education Program” (EFNEP), Tonya Pickett’s mission is to reach limited income families with education about healthy food choices, being active, preserving the safety of their food, and stretching their food dollars.

Working exclusively with limited income kids, Ms. Pickett does a series of 6-8 lessons which promote a low fat, high fiber diet, drinking lots of water, and being physically active.

vce organwise guyAt Fallon Park Elementary, she is teaching the “OrganWise Guys” curriculum to over 100 kindergarten children. Each student had the opportunity to sample 3 healthy snacks including the Banana Pudding In A Bag recipe.

“OrganWise Guys” is also being taught to K-2 students at Roanoke Academy for Math and Science and to first graders at Fairview Elementary.  Ms. Pickett will also teach it this summer at the Boys and Girls Club and YMCA Magic Place camps.

Other FNEP programs, “Healthy Weights For Healthy Kid” and “Teen Cuisine” are being taught to older students at James Madison Middle School and summer camps.

At the end of the program, each participant gets a certificate of completion and the VCE’s “Cooking is a Snap” cookbook – from which the recipes originate.
